What the Heck is a CSA? Find Out at the Fair!

The CSA Share Fair on Sunday, March 10, is a chance to meet more than 40 local farmers, ranchers and fishers who offer Community Supported Agriculture (CSA) shares to the public. They'll be showcasing various options, including vegetables, fruits, pastured meats, wild fish, eggs, flowers, honey and more. To keep it simple for you, there's a matchmaking service where you can check off what you're interested in and a helpful volunteer will point you toward the best farmer for you! Time and location of this year's fair are at the bottom of this post.

If you're not sure what a CSA is or if there's one that might be right for you, here's a Q & A with CSA maven Katherine Deumling of Cook With What You Have that I posted earlier.

Why join a CSA?

Joining a classic CSA gives you a window onto a farm and what it takes to grow the delicious variety of things that you'll receive in your share each week. The farmer chooses what's best that week that  can relieve you of most of your decision-making, though more CSAs are giving members to order from a list of what's available. I actually love not having to make any decisions about what produce I'm getting because then I can concentrate on being creative with what I receive.

CSA farmers in our region tend to grow a staggering variety of produce and typify the saying, "What grows together, goes together!" Belonging to a CSA has expanded my repertoire and introduced me to vegetables I wouldn't have picked up at the farmers' market, though some people are not so keen on the "no-choice" bit. My online Seasonal Recipe Collection comes in handy, since the recipes are sorted by vegetable and there is a thorough introduction for each vegetable.

I also subscribe to a CSA because it helps me budget, and when you calculate out the cost of CSA by the week it is quite reasonable. I pay up front or in a few installments, and then supplement from the farmers' market or the store with fruits or occasional vegetables I'm not getting in my CSA—like asparagus, artichokes and a few other things that aren't typically found in a CSA. If I know I'll be getting my gorgeous box of produce each week, I won't be tempted to buy other things, to make the most what I've already paid for.

What are the different kinds of CSAs?

Some CSAs focus exclusively on produce, some also include fruit like blueberries, strawberries, rhubarb, apples, pears, quince and so forth. Some give you the option to add an extra Salad Share for those who love salad greens; others might give the option to add eggs, honey, flowers or meat. Some CSA farms work together with other area farms to offer such a wide array. And then there are exclusive meat and fish CSAs as well as CSAs that focus on a single crop like apples or flowers.

There are so many local farms offering CSAs. What should I consider before joining a CSA?

Generally, if you want super-delicious produce and can't always make it to a farmers' market, a CSA is for you. If you like to cook or want to cook more and are typically home most nights of the week, a CSA is definitely for you. If, on the other hand, you travel a lot or are out a lot at night, you'll struggle to keep up with the produce.

Think about the size of your household and your family members' eating habits to decide if a CSA is a good idea or not—do you all like vegetables or are open to trying them? How much do you think you'll eat? You might start with a half share (most farms offer two different-size shares) and see how that works, setting yourself up for success rather than the guilt of wasting some. Also consider if the pick-up site is convenient (some CSAs deliver to your door as well). But make sure you think about the logistics of picking up your share—make a plan with a friend or neighbor, either to share the CSA or both do it so you can alternate doing the pick up. This is great community-building in and of itself, and you can also share ideas of what to do with less familiar produce.

Does a CSA subscription make sense for a single person?

It very much depends on the person—if you are a vegetable lover and like to cook and entertain, by all means. If I were single I would buy a CSA but I do cook and eat more vegetables than almost anyone I know! And again, consider a half-share or splitting it with a neighbor or friend.

I'm afraid I'd be paying for produce I can't use or my family won't eat, and I know nothing about rutabagas or kohlrabi. What should I do?

This is an important factor to consider carefully. As I noted earlier, I have vastly expanded my appreciation of certain vegetables (rutabagas being at the top of that list) by becoming a CSA member and I've enjoyed that.

There are a handful good cooking techniques and methods—think grated vegetable pancakes, like latkes—that are a critical to successful CSA cooking. In fact I added a grated rutabaga to fried rice the other night and it was delicious! And if you occasionally share an extra kohlrabi with a neighbor (I have definitely done that, too) the benefits of the flavor, nutrition and connection to your place and those growing our food may well trump the "kohlrabi hardship"!

I don't drive. How would I pick up my share?

I pick up my share by bike and it works well. Most CSA shares will fit into two typical panniers. Some CSAs have pick-ups at companies or farmers' markets so you might inquire if your place of work is linked up with a CSA farm or ask them if they might consider it. Colombia Sportswear, Intel, various Providence sites, Good Samaritan Hospital, Ecotrust and probably many others have CSA drops.

Farm Bulletin: Musings on the Arch Cape Chicory Harvest

The farm in winter is often portrayed as a dormant time, with barren fields devoid of activity but for the stalks and dead detritus of the previous year's crops. Nothing could be further from the truth, as elucidated by contributor Anthony Boutard of Ayers Creek Farm.

As we work our way down the row, it is clear the farmers are not the only organisms harvesting the chicory. We share the field with three different rodents: pocket gophers, voles and mice. We all have our own harvesting methods and challenges.

Farmers use several different harvest knives. We maintain a fleet of ten six-inch produce knives and eight five-inch produce knives. These have straight blades and a square tip, the sort produce staff have in their holster at the grocery store. These knives are cheap (~$14) and rugged. The six-inch knife is safe and easy to use in the field. The curved blades and sharp points of a chef’s knife are fine in the kitchen but a dangerous menace in the field. A lettuce knife is a more specialized tool, having two cutting edges. Carol and Linda use these to liberate the head from the ground, and shift to the produce knife for trimming. The five-inch knives, a bit too small for the field, are useful for the final trimming at the sink. For other tasks, the heft of the machete-style knives is useful.

Because the knives are used in the abrasive environment of the soil, after a couple of hours the edge is lost, and the knife is swapped out for a sharp one. We go through three or four knives in short order. Back at the shed, we put a fresh edge on the knives with an electric sharpener. A few years ago, a farm magazine had an absurd article telling farmers how sharpen their knives with an oil stone. Even with the mechanical sharpener, the effort takes  30 to 45 minutes. I sharpen my wood block tools with a series of Japanese water stones, but for a knife that will return to soil the next day it is a stupid waste of time. Staff prefer to use a mill bastard file which is a bit coarse for my tastes, but I always defer to them on the matter of tools they use.

Waterproof gloves round out the harvest tools. One hazard with field gloves is that it is easy to wind up with a community of left hand specimens. The cure is to name each pair and write the name on both gloves. For example, we have pairs named Jasper, Maine, Moscow and Olive. Once named, the left and right gloves hang together, a bit of magic I can’t explain.

Our most common companions in the field are voles. In literature, subterranean creatures shunning the sun invariably lack a sense of humor. Dwarfs and trolls, whether in Wagner, the Norse legends or Tolkien, are difficult characters. And so it is with the voles and gophers. During the winter, the gophers are lethargic and consume very little. They are a summertime menace. In contrast, voles become hyperactive in the winter.

Voles are aggressive hoarders, relentlessly caching food. In the chicories, they start with the root, working their way to the crown. Then they pull the leaves into their tunnel. (Top photo: A fine chicory hollowed out by a vole, a beautiful remnant.) Plant materials are masticated and then cached in hollowed out areas where the vegetation ferments, similar to ensilage. They aspire to no leisure activities, never ceasing in building their cache accounts. Voles excavate miles of tunnels, keeping them away from the eyes of predators. The voles have a short tail, small, beady eyes and their ears sit close to the head. They seldom leave the safety of their tunnels. In the winter they live communally in a hole lined with dry grass, conserving their energy. Even during the wettest weather, the underground nest stays dry.

We also encounter mice in the field. They don’t cache vegetation. Mice cache and consume seeds, and they seek out insect larvae and pupae. They eat some foliage to round out their diet. During the winter they also rest communally in grass-lined nests, with one or two sallying forth to feed while the others keep the nest warm. The live in underground burrows, or in hollow logs, irrigation pipes, bird houses, cars or any place providing shelter. They have long tails for balance, large ears to hear advancing predators and bulging eyes that give them a range of view, all valuable for an animal that forages above ground. They are adept climbers, and they have a more beguiling presence than their subterranean-dwelling kin.

The mouse seed caches are visible in both the cultivated and uncultivated areas of the farm. Not every store of seeds is consumed, and those left uneaten sprout. In the photo above, tufts of native grass betray an unused granary. In the field, clumps of chickpeas, wheat, corn and favas in a similar pattern are common.

What eats get eaten. A healthy population of rodents is the base for a healthy population of predators. We have barn and great-horned owls, kestrels, red-tail hawks, great blue herons and weasels all partaking of the fine rodent riches. The barn owls hunt in the open fields and the great-horned owls tend to stay in the cover of the oak savannah. No, predators do not control the rodent populations; it is exactly the reverse, rodent populations drive survival of the predator young. Without adequate food, the young languish and die.

Both owls currently have chicks in the nest, and a good rodent year means more of these chicks will become adults. The owls tear apart the rodents, regurgitate a cast or pellet of fir and bones. The herons gulp down their prey whole. Red-tailed hawks and kestrels tear apart their prey. The kestrels don’t like the stomachs, so they eviscerate their prey, leaving a pile of guts near the feeding perch. The kestrels are more resilient than owls and other raptors because they feed happily on larger insects such as grasshoppers, frogs, worms and small snakes. As an aside, owls are more closely related to parrots than the hawks and falcons.

Aside from poison, which we would never use, there is no means of controlling these small rodents. Even poison baits are a stop gap measure of dubious efficacy, just a damaging outlet of the farmer’s anger. The gophers, mice and voles are part of the endeavor and, in their own right, remarkable creatures. A heathy ecosystem self-corrects. Rodent populations are cyclical. In 2013, we had intense rodent pressure and lost the entire chicory crop. As a concession prize, a young bobcat took up residence for several months. Tito was not happy about the matter, though. The following year, voles were scarce.

We are on a wildlife corridor, so various creatures, elk, deer and mink move through the farm. Thursday night, Abel saw a cougar and her kits near the barn. They are probably moving to the ridge dominated by Bald Peak in search of prey, deer in particular, but quite possibly small livestock as well.

In Season: Galangal, Lemongrass and Turmeric

In the most recent Beaverton Farmers Market newsletter, market manager Ginger Rapport offered a primer on using galangal, lemongrass and turmeric. Normally thought of as exotic ingredients, they've been adapted to grow in Oregon's maritime climate and are now being grown by several local farms. Find them at your neighborhood farmers' market, as well as at Rubinette Produce or other stores that carry produce from local farms.

Galangal

This flavorful tuber (top photo) is the spicy cousin of ginger and is prized in Thai cuisine for the citrus-like flavor it imparts to soups and its burst of herbal heat in curry pastes. Usually found in Asian grocery stores, you can also find organic galangal at Denison Farms’ booth this Saturday alongside fresh lemongrass and turmeric.

Galangal’s knobby tubers are prepared much like ginger. To be recipe-ready, they are usually peeled and then minced, sliced or grated. It is possible to substitute ginger for galangal when it is unavailable, but we recommend you make the effort to use this zingy aromatic when it is in season. According to Cook’s Illustrated magazine, galangal’s distinctive piney flavor is best used in savory dishes as opposed to sweet dishes where ginger is a better option.

tom_yum_soup.jpgSince fresh galangal is not available all year round, we recommend putting a stash of peeled fresh tubers in your freezer for use when it is out of season. While you are thinking in advance, we recommend freezing lemongrass as well. Together, they provide the exciting flavors required for a variety of delicious dishes including soups, curries and sauces. To freeze lemongrass, trim stalks to the bottom six inches, then transfer to zip-lock bags and freeze.

Galangal is a critical ingredient in the popular hot and sour Thai soup known as Tom Yum or Tim Yam (above right). And, while it's possible to substitute ginger for the galangal, why bother when you are lucky enough to access the real thing? The combination of spicy aromatics, flavorful broth and tasty add-ins make this the perfect dish for our chilly winter days.

Lemongrass

Lemongrass is a stalky plant that gives dishes a zesty lemon flavor and aroma. Look for stalks that are fragrant, tightly formed, and a lemony-green color on the lower stalk.

lemongrass.jpgTo prepare lemongrass, remove tough outer leaves to expose the pale yellow interior that is softer and easier to slice. Use a sharp serrated blade to slice off the lower bulb, about two inches from the end of the stalk. Discard bulb. Stop slicing when you have cut two-thirds of the way up the stalk, or when it is no longer yellow and fleshy. Because lemongrass is so tough, the slices will need a to processed in the food processor on high, or pounded in a mortar and pestle for a minute or two.

Fresh Turmeric

Livelier than its dried form, fresh turmeric has bright orange flesh and is earthy, peppery and slightly bitter. Like ginger and galangal, it is usually peeled before using.

turmeric_roots.jpgStore fresh turmeric in the refrigerator in a plastic bag, or airtight container, or freeze it for several months. In recipes, one inch of fresh turmeric is equivalent to one tablespoon freshly grated turmeric, or 1 teaspoon of ground turmeric.

How an Oregon Rancher is Building Soil Health and a Robust Regional Food System

This is my second contribution to Civil Eats' monthly series of profiles of farmers and ranchers who are changing our food system for the benefit of our communities, our health and the environment.

which serve as a model for sustainable meat operations
in the Pacific Northwest.

When Cory Carman returned in 2003 to her family’s ranch in remote Wallowa County in eastern Oregon with a Stanford degree in public policy in hand and a stint on Capitol Hill under her belt, her intention was to stay for the summer, helping her uncle and grandmother with ranch work while she looked for her next job working on public policy. By that fall, though, it was obvious that if she left, the ranch wouldn’t be there for her to come back to.

“They were the only ones left on the ranch,” she said, recalling the heartbreaking specter of how hard her uncle and her grandmother, who was then in her 80s, had to work to barely scrape by. “I think I felt the weight of what they were trying to hold together, and I thought how unfair it was for me to expect that they could just keep it together until I came back someday.”

So she decided to stay.

Carman Ranch began as a few hundred acres Carman’s great-great-grandfather Jacob Weinhard—nephew to the legendary Northwest beer brewer Henry Weinhard—bought for his son Fritz in the early 1900s. Under Carman’s watch, the operation now spans 5,000 acres of grasslands, timbered rangeland, and irrigated valley ground nestled against the dramatic peaks of the Wallowa Mountains. Hawks, eagles, and wildlife greatly outnumber people in this isolated northeastern corner of the state, originally home to the Wal-lam-wat-kain (Wallowa) band of the Nez Perce tribe.

Distinct from most cattle operations in the U.S., Carman’s cattle are 100 percent grass-fed well as grass-finished. (The term “grass-fed” is not regulated, so it can mean that animals have only been briefly pastured before they’re sent to a factory feedlot to be finished.) The ranch primarily produces cattle and pigs, which it mostly markets to wholesale accounts, though it sells a lesser amount of meat as “cow shares”—or quarters of beef ranging from 120 to 180 pounds purchased directly by consumers.

Equally if not more important to Carman, however, is the focus on what she calls the “holistic management” of her land. This involves constantly moving the cattle and paying careful attention to the rate of growth of the animals and grasses. By this system, the steers select the forages they need to grow and gain weight, and the grasses get clipped, trampled down, and fertilized with manure, resulting in fields that are vibrant—they retain water, resist drought, contain abundant organic matter, which contributes nutrients and carbon, and are highly productive without the addition of fertilizer.

Amanda Oborne, vice president of food and farms at Ecotrust, a regional nonprofit organization working on social, economic, and environmental issues, said Carman inspired Ecotrust’s food system work by helping her understand the challenges of creating local beef and pork markets, the complexity of scaling an agricultural business with integrity, and the importance of grasslands and large grazing animals in fighting climate change through carbon drawdown.

Oborne remembers Carman walking her around the fields of the Zumwalt Prairie, a preserve owned by the Nature Conservancy that is on the western boundary of the ranch, and picking at blades of bunch grass as she explained how the native species create pockets of nutrition for migrating birds through the winter, and how the long, perennial roots scaffold a whole cathedral of structure and life under the soil.

“It’s Cory’s ability to tell these stories, to explain the flaws of the dominant system without imbuing judgement or animosity, and to partner across every divide—be it age, gender, class, political philosophy, or hometown—that makes her such an effective and innovative thought leader,” Oborne said.

Introducing Holistic Management

Within a year of returning to the ranch, Carman met and married her husband, Dave Flynn (the couple have since divorced), and started a family, which includes three children, Roan and twins Ione and Emmett.

With a fifth generation of the family living on the ranch, the challenge became not just figuring out how to maintain her family’s business and regenerate the land, but how to leave a viable legacy to pass on to her children.

“You don’t have a ranch so that you can sell it and retire; you have a ranch so you can pass it on—that’s sort of in the DNA,” Carman said. “It’s what gets priority, and [you] grow up knowing that there’s something more important than all of you as individuals.”

While Carman respects her family’s history and that of her neighbors, she is pursuing the inverse of the methods used on most of the nation’s cattle ranches since the middle of the last century—methods also used by her father, who died in a ranching accident when Carman was 14, and by her uncle who took over.

“It was the fertilizer era,” Carman noted of her uncle’s initial resistance to the idea of leaving forage in the pastures. “It’s like in those first few decades when fertilizer worked really, really well. You could just take everything off of the land that you could possibly grow and sell it—and then pour more fertilizer back on. And it worked. Until it didn’t.”

With an eye toward her legacy, Carman went to her uncle with the idea of raising grass-fed beef. “I will never forget what he told me,” she said. “He said, ‘Why don’t you do something people like? What about jerky?’”

The thing that she knew—and that her uncle didn’t—was that there were people in more urban areas who were willing to pay a premium for healthy food. “He had no context,” Carman said. “It’s a paradigm shift.”

While Carman had been around cattle her whole life—and the animals she is raising are direct descendants of the Herefords Weinhard originally brought to the ranch—she had no idea how to finish the animals on grass, since much of that knowledge had been lost in the industry’s rush to finish cattle faster on grain in feedlots.

Carman began to research and implement a practice called holistic management, which is based on the idea that grass is your crop, and a portion of it needs to go back into feeding the land and the soil microbes. A tool of regenerative agriculture, holistic management integrates social, economic, and environmental factors to help the farm or ranch succeed economically, improve the health of the land, and provide local communities more nutritious food.

“Our neighbors are still grazing [their pastures] into the ground with this idea that if you’re not grazing it, you’re wasting it,” Carman said. “For us, that is our nutrient base that we’re putting back into the ground. We’re going to get more productivity by leaving more behind.”

As for her uncle’s reaction to the changes he’s seen since she came back 15 years ago? Carman said he’s now her biggest fan.

“If you come to the ranch, he’ll say, ‘You would not believe the root systems in these grasses,’” she said. “He didn’t see the vision [before], and now I think he does.”

Blazing a Trail Toward a Robust Regional Food Economy

Initially Carman and her husband sold beef in shares, where customers would commit to buying a half, quarter, or eighth of a carcass. They were eventually joined by a neighbor in Wallowa, fellow grass-fed beef rancher Jill McClaran of McClaran Ranch, and they were able to start supplying wholesale clients including Oregon Health Sciences University (OHSU) in Portland, and Bon Appétit Management Company (an on-site restaurant company, since acquired by London-based Compass Group).

“We slowly started building up this little business,” Carman said. “We raised cattle, finished them on grass, processed them, owned the meat, arranged for distribution through different entities to get the meat out, and then we froze it. It was super tight, but we were kind of scraping by.”

After a customer chipped a tooth on a piece of bone that made it through the grinder at the processing plant and sued, Carman created two LLCs to reduce her liability. Then she took on investors in 2017 to expand her reach. The additional capital allowed Carman to work with larger wholesale accounts such as New Seasons Market, a chain of West Coast grocery stores. Working with a core group of six like-minded producers with ranches from Oregon to Nevada, she is able to supply meat year-round.

“Our purpose in the world is to prove out this model where you can do it the right way,” Carman said of her producers, who agree that building soil is a primary focus, “with layers of values that we’re living toward.”

A woman in the male-dominated field of ranching, Carman notes that women constitute much of her team: she employs a woman ranch manager and director of business development; she has partnered with other women ranchers like McClaran to supply wholesale clients; women serve on the Carman Ranch board and comprise half her investors; and she considers women to be among her most innovative customers.

The model Carman has built so far has already proved an inspiration to other Northwest producers looking to scale up their businesses. Ecotrust’s Oborne said that much of what the nonprofit built at the Redd on Salmon Street, a development designed to support local food enterprises and scale a more robust regional food economy, was based on the work Carman has done.

“Many other regenerative farms and ranches in rural Oregon and Washington are now following in her footsteps and building their businesses in the Pacific Northwest thanks to the trail Cory has blazed,” Oborne said.

Hillary Barbour, director of strategic initiatives for Burgerville, a restaurant chain based in the Pacific Northwest, said its journey with Carman began in a pasture on Carman’s property, when she pulled a chunk of cover crop from the ground, held it triumphantly above her head, and said, “You see, we’re soil farmers!”

Barbour said her company believes Carman’s commitment to soil, human and animal health, and maximizing the value of production for the regional economy aligned with Burgerville’s vision for the future, cementing the relationship going forward.

Beef That Brings It All Together

Calling grass-fed beef “an elegant nexus of all of the issues,” Carman believes that cattle are a necessary component of fertility for every cropping system. That’s because the bacteria in the rumen of the cattle makes what she refers to as “the soil/food web” more vibrant. When we harvest the cattle, we harvest the micronutrients out of the soil, she said.

“The soil/food web needs to be totally functional to get the micronutrients, [and] that’s what we’re missing in our food right now,” she said.

It’s not only that there’s a better fatty acid profile in grass-fed beef, Carman said of studies showing that grass-fed beef is higher in omega-3 fats, vitamin E, beta-carotene, and conjugated linoleic acid (CLA). She points to what she calls the human health epidemic of chronic illness and disease, believing that it’s related to how incredibly degraded the soil is from overuse of fertilizers and other industrial practices.

Saying that grass-fed beef is an important catalyst that brings farmers and ranchers together, Carman feels that it’s a place to start the conversation about regenerative agriculture and rebuilding the food system.

“The push is always for any brand to go national,” she said. “Instead, we need to think about production on a regional basis and build out and support appropriately scaled infrastructure. That’s where you can really have the magic.

“Those are all the things we’re trying to prove out with our little model.”

Dave's To-Die-For, Sky-High Biscuits

We are rich with talented friends who also happen to be great home cooks. Bruce's pork vindaloo. Denise's Korean mandoo dumplings. Jeff's tarte tatin. Kathryn's shrimp and grits. Wendy's cakes. Dana's curried squash.

Here at home I have the good fortune to have a husband who smokes his own bacon, bakes six loaves of organic sourdough every two weeks and loves to make breakfast on the weekend, particularly if it involves baking up a batch of scones or biscuits to go with his Julia Child-worthy cheese omelets. (Did I mention he's also become quite the home bartender, whipping up cocktails at the drop of a hat?)

So when I stumble downstairs on Saturday morning and see him bustling around the kitchen with flour on his hands and the oven warming the house, I know by the time I get the dogs fed and finish my first cup of coffee he'll be pulling out a pan of his signature baked goods and setting them on the counter with butter and jam.

I know, how lucky am I?

Dave's To-Die-For, Sky-High Biscuits

2 1/4 c. (285g) all-purpose flour*
3/4 tsp. sea salt
1 tsp. sugar
4 tsp. baking powder
1/3 c. (75g) very cold butter
1 c. milk

Preheat oven to 450°.

Place flour, salt, sugar and baking powder in food processor and pulse for a few seconds to combine.Cut butter into small pieces and add to food processor. Pulse half a dozen times and check for the size of the butter pieces. Repeat if necessary until the butter is in pieces roughly the size of peas.

Put flour mixture in a mixing bowl and add the cold milk. Toss together gently until barely combined. As soon as the dough holds together, turn it out on a lightly floured counter. Gently "knead" the dough a few strokes until it is a mostly a cohesive ball. The fewer kneads the better.

Pat out the dough with your hands into a rectangle 1/2" to 3/4" inch thick, depending on how tall you like your biscuits. Cut into 2-inch circles (you should get approximately 6 to 8), and place on a parchment-lined cookie sheet or sheet pan. Leftover dough can be gently combined and patted out again to make more biscuits.

Bake at 450° for 8 to 10 minutes until tops are lightly browned. Butter and eat while still warm, preferably with honey or a selection of homemade jams.

Summer Book Report, Part II: Two in the Far North

Memoir. History. Love story. Ecological screed. A meditation on our place in nature. Astute political analysis. Even some murder and mayhem (of the natural world sort).

I've never read anything quite like Margaret Murie's Two in the Far North, which is, at its core, a memoir of her life growing up in pre-statehood Alaska, meeting her husband, Olaus, a wildlife biologist, and spending much of their lives together studying and working to preserve Alaska's wild places. It was a lifetime of effort and advocacy that eventually led to the creation of the Arctic National Wildlife Refuge (ANWAR) in 1960.

We meet Murie when she is just nine years old, at the point when she and her mother traveled from Seattle to meet her father, an assistant U.S. attorney for what was then called the Territory of Alaska. In the early 1900s, that meant a several-day journey via steamship from Seattle to Skagway, in Alaska's southeast panhandle, then another several days to travel by train to Whitehorse in Canada's Yukon. The next leg took the pair up the Yukon River to Dawson where they were met by Murie's father, and then traveling together up the Tanana River to Fairbanks on a river steamer.

"In 1911 the river steamer was queen. There was a great fleet then, nearly all with feminine names, churning and chuffing their stern wheels up the rivers and sliding briskly down them. When the great two-stacker Mississippi-style steamer came in to any dock, she came like a confident southern beauty making a graceful curtsy at a ball. [These steamers] lived their lives between St. Michael at the mouth of the river and Dawson, sixteen hundred miles upstream."

Arriving in Fairbanks, the family moved into the one vacant house which Murie describes as "way out on the edge of town," with only four rooms, a handpump in the kitchen and a woodstove that heated the house.

Murie's early life is described from her vivid memories growing up in the far north, cooking on that woodstove, walking to school even in fifty-below-zero weather and exploring the world of the gold rush town where "there were no others nearer than eight days by horse sleigh or ten days by river steamer.

Going off to college—in Portland, to Reed College, no less—at the age of fifteen, she traveled by dogsled accompanied only by a driver and his dogs for nine days, traversing frozen rivers and mountains and staying in rough-and-tumble roadhouses along the way. From this point on, Murie quotes extensively from her astonishingly descriptive diaries about meeting her husband and spending their honeymoon on a research expedition above the Arctic Circle, studying its flora and fauna with the idea that documenting this unexplored region could help to preserve it for future generations.

This love of the wilderness, her enchantment with the natural world and the difficult, funny and moving experiences they had together that bring the times and places to life, putting flesh on the characters they meet along the way, some in the most unexpected circumstances. Murie is a storyteller of great warmth and humanity, and I can't recommend this book highly enough.

Summer Book Report, Part I: Thoreau (and Alaska)

No, in case, after reading this post's title, you're thinking, "Whaaaaat?"…Henry David never went to Alaska. (Just wanted to clear that up before we went any further. See end of this post for details.)

In fact, Thoreau rarely left the region surrounding Concord, Massachusetts—a few trips to Maine, New Jersey and Connecticut notwithstanding—preferring to make an intimate connection with the flora and fauna of his New England home. Despite that, in Henry David Thoreau, A Life, author Laura Dassow Walls places him squarely in the middle of the great debates and characters of his time, flying in the face of my impression of him as a hermitic recluse living in a hut by a pond.

Thoreau was just shy of his 28th birthday when he moved from his family's home in town and into the simple cabin he built on Walden Pond, the subject of his most popular book. A little more than two years later, he returned to his family's home and lived there for much of the rest of his life. Thoreau earned his primary living as a surveyor, but pursued his writing, speaking tours and correspondence with the likes of poet and philosopher Ralph Waldo Emerson, a lifelong friend; the poet Walt Whitman; abolitionist Frederick Douglass; Margaret Fuller, a journalist and women's rights activist; and the well-known naturalist Louis Agassiz, with whom he had several very public disagreements.

Despite recurring bouts of chronic tuberculosis which he'd contracted as a young man, he traveled widely throughout New England, lecturing on a range of topics, from Trancendentalism to the abolition of slavery—he raised money and defended the campaign of John Brown, even issuing a fiery defense after Harper's Ferry—and, of course, the need to conserve the nation's natural areas for future generations.

Immensely engaging and well-written, this biography is going on my own list of books I've loved. Walls quotes extensively from Thoreau's writing and personal journals but, rather than being pedantic, it drew me into his inner life and thoughts, breathing life into a colorful, fascinating man I only thought I knew.

The second book is one that has been on my favorites list since the first time I read it years ago, and is one I've given as a gift many times. Here's my review of Two in the Far North by Margaret Murie.

An Oregon Dairyman Reclaims the Pasture

Meet Jon Bansen, a pasture-based dairyman in Oregon's Willamette Valley, in this profile I wrote for Civil Eats' Farmer of the Month series.

In the U.S., the dairy industry is a tough business for organic and conventional producers alike, with plunging prices and changing consumer demand leading to a spate of farm shutdowns and even farmer suicides. And in Oregon, where dairy is big business—accounting for 10 percent of the state’s agriculture income in 2016—the story is much the same.

But Jon Bansen, who has farmed since 1991 at Double J Jerseys, an organic dairy farm in Monmouth, Oregon, has throughout his career bucked conventional wisdom and demonstrated the promise of his practices. Now he’s convincing others to follow suit.

Bansen and his wife Juli bought their farm in 1991 and named it Double J Jerseys, then earned organic certification in 2000. In 2017, he switched to full-time grass feed for his herd of 200 cows and 150 young female cows, called heifers. He convinced his brother Bob, who owns a dairy in Yamhill, to convert to organic. His brother Pete followed suit soon after. (“He’s a slow learner, that’s all I can say,” Bansen joked.)

He’s someone who prefers to lead by example, which has earned him the respect of a broad range of the region’s farmers and ranchers, as well as its agricultural agencies and nonprofits.

“Jon is an articulate spokesperson for organic dairy in Oregon and beyond,” said Chris Schreiner, executive director of Oregon Tilth, an organic certifying organization. “His passion for organic dairy and pasture-based systems is contagious, and he does a great job of translating complex grazing production systems into common-sense farmer wisdom. His personal experience … is a compelling case for other dairy farmers to consider.”

George Siemon, one of the founders of Organic Valley, the dairy co-operative for which Bansen produces 100 percent grass-fed milk under Organic Valley’s “Grassmilk” brand, believes the switch to 100 percent grass is a direction that Bansen has been moving in all along.

“He’s just refined and refined and refined his organic methods,” said Siemon, admitting that Bansen is one of his favorite farmers. “He’s transformed his whole farm. It’s a great case when the marketplace is rewarding him for getting better and better at what he does and what he likes to do.”

Deep Roots in Dairy Farming

Dairy farming is baked into Bansen’s DNA, with roots tracing all the way back to his great-grandfather, who emigrated from Denmark in the late 1800s, settling in a community of Danes in Northern California. His grandfather followed in the early 1900s, hiring out his milking skills to other farmers until he saved enough to buy his own small farm near the bucolic coastal town of Ferndale in Humboldt County.

Bansen was about 10 years old when his father and their family left the home farm to strike out on their own in Oregon’s Willamette Valley. They bought land in the tiny, blink-and-you’ll-miss-it town of Yamhill, about an hour southwest of Portland.

A typical farm kid, Bansen and his seven siblings were all expected to help with the chores. “You fed calves before you went to school, and you came home and dinked around the house eating for awhile until you heard Dad’s voice beller at you that it was time to get back to work,” Bansen recalled. “I was a little envious of kids that lived in town and got to ride their bikes on pavement. That sounded pretty sexy to me.”

After studying biology in college in Nebraska and getting married soon after graduating, Bansen and his wife worked on his dad’s Yamhill farm for five years and then began talking about getting a place of their own. They found property not far away outside the sleepy town of Monmouth. It had the nutritionally rich, green pastures Bansen knew were ideal for dairy cows, fed by the coastal mists that drift over the Coast Range from the nearby Pacific Ocean.

One day, a few years after they’d started Double J Jerseys, a man knocked on their door. He said he was from a small organic dairy co-op in Wisconsin that was looking to expand nationally. He wondered if Double J would be interested in transitioning to organic production, mentioning that the co-op could guarantee a stable price for their milk.

It turned out that the stranger was Siemon, a self-described “long-haired hippie” who’d heard about Bansen through word of mouth. “He was reasonably skeptical,” recalls Siemon. “He wanted to make sure it was a valid market before he committed, because it’s such a big commitment to go all the way with organic dairy.”

For his part, Bansen worried that there wasn’t an established agricultural infrastructure to support the transition, not to mention the maintenance of an organic farm. “I was worried about finding enough organic grain,” he said.

On the other hand, however, the young couple needed the money an organic certification might bring. “We had $30,000 to our name and we were more than half a million dollars in debt” from borrowing to start the farm, Bansen said.

After much research and soul-searching, they decided to accept Siemon’s offer and started the transition process. It helped that his cousin Dan had transitioned one of his farms to organic not long before and that generations of his family before him had run pasture-based dairies.

“My grandfather, he was an organic dairy farmer, he just didn’t know what it was called,” Bansen said. “There were no antibiotics, no hormones, no pesticides. You fed your cows in the fields.”

The Organic Learning Curve

During the Bansens’ first organic years, they had to figure out ways to eliminate antibiotics, hormones, and pesticides—all of which Bansen views as “crutches” to deal with management issues.

To prevent coccidiosis, a condition baby cows develop when they don’t receive enough milk and are forced to live in overcrowded conditions, for example, Bansen fed his calves plenty of milk and made sure they had enough space.

To prevent cows from contracting mastitis, an infection of the mammary system, he changed the farm’s milking methods.

Another learning curve had to do with figuring out the balance of grain to forage (i.e., edible plants). Originally Bansen fed each of his cows 20 pounds of grain per day, but after switching to organic sources of grain, he was able to reduce that to four or five pounds a day. This switch cut down grain and transportation costs dramatically.

He also had to learn to manage the plants in the fields in order to produce the healthiest grazing material possible. Since the transition to organic, Double J has grown to nearly 600 acres, a combination of pastures for the milking cows, fields for growing the grass and forage he stores for winter, when it’s too cold and wet to keep the animals outdoors.

“It’s not a machine; it’s a constant dance between what you’re planting and growing and the weather patterns and how the cows are reacting to it,” said Bansen. “There’s science involved in it, but it’s more of an art form.”

Cows Living in Filth at Mega-Dairy While State Allows It to Continue Supplying Milk

This post summarizes media coverage involving incidents at Lost Valley Farm, one of two mega-dairies in the Boardman area that supply milk to the Tillamook County Creamery Association (TCCA) for its dairy products, including Tillamook cheese. Source materials used are listed at the bottom of the post.

Even before it opened, the Boardman-area mega-dairy known as Lost Valley Farm, owned by Greg te Velde of Tipton, California, was skirting state regulations by starting construction of the dairy without  having the proper permits in hand.

An article in the Salem Statesman Journal reported that "Oregon regulators approved te Velde’s Lost Valley Farm in March [2017], despite formal objections from a dozen state and national health and environment organizations that raised concerns about air and water pollution, water use and health impacts on nearby communities."

According to an article in the Capital Press, in its first year of operation alone, it:

  • Was sued by Daritech, a dairy equipment manufacturer, in federal court for allegedly failing to pay in a timely fashion more than $340,000 for the installation of equipment.
  • Was sued by IRZ Consulting for not fully paying for labor, equipment, materials and other services related to the construction and improvement of real estate.
  • Was sued by Laser Land Leveling, Inc., which sought to recover $1.4 million for labor, materials and other services. (The suit was settled out of court.)
  • Did not report as required on wastewater from the dairy that had overflowed into a pit not authorized for storage.
  • Did not maintain adequate lagoon storage capacity to deal with runoff in case of a storm.
  • Did not report as required that  liquid and solid manure had discharged from a tank, flowing into areas unauthorized for waste storage.
  • Was issued three notices of non-compliance with its CAFO permit between late June and late November of [2017], which required corrective actions.

Then the Statesman-Journal reported that te Velde had been convicted in July of 2017 of "careless driving contributing to an accident" after he hit an Oregon Department of Transportation truck on Interstate 84 in Hood River County and was fined $450. The same article reported that te Velde was arrested in August in a Tri-Counties, Washington, prostitution sting on charges of patronizing a prostitute and possessing methamphetamine. He was booked into the Benton County jail and subsequently released on bail.

At the time of his arrest in the prostitution sting, the same article reports, the Tillamook creamery, which processes the milk from Lost Valley and another mega-dairy in Boardman for most of its dairy products, issued a statement saying "we were extremely disappointed to learn of these allegations, and they very clearly go against the values and behaviors we hold true at the Tillamook Creamery Association." The article quotes Tillamook as stating that "the staff that we’ve worked closely with at Lost Valley are hard-working and dedicated to supplying high-quality milk, and we recognize that the alleged personal actions of one individual should not tarnish the professional reputation of everyone involved in the operation. That said, we expect the Lost Valley Farm organization to respond swiftly, responsibly and with a high degree of accountability in regards to this situation."

Lost Valley's problems didn't end there.

In February of 2018, the Capital Press reported that the State of Oregon had slapped Lost Valley with a $10,640 fine for allegedly discharging waste in violation of permit conditions, an amount that many critics called a slap on the wrist considering the number of violations found and the four citations the facility had been issued. Then in late February, the state decided to sue the mega-dairy for "repeatedly endangered nearby drinking water by violating environmental laws" and saying it should be shut down immediately, according to an article in the Statesman-Journal.

The Oregonian reported that "in the state’s lawsuit, inspectors said that te Velde and [Lost Valley manager] Love stored waste and wastewater in areas not permitted for it; never completed building all the required lagoons and other facilities to store it; the existing facilities regularly overflowed when it rained; they removed parts from a storage tank after agreeing not to; and the container that held dead animal bodies leaked."

Love and te Velde issued a dramatic written response to the state's lawsuit, which the Statesman-Journal reported as saying "the injunction would put them out of business, forcing them to lay off 70 workers, euthanize their cows, lose a $4 million per month milk contract, and default on local creditors."

The article continued: "'The department’s order would have significant ramifications to the local community where the dairy is located,' te Velde [wrote]. 'Many of our employees are Latino and rely on the dairy to support their family.'"

The Tillamook creamery, for its part, is reported to have said in an e-mail to the Statesman-Journal at the end of February that "based on a number of recent factors that indicate deterioration of the Lost Valley operation, Tillamook has initiated the process to terminate our contract with Lost Valley Farm."

Despite this, as of the end of March, Tillamook was still buying milk from the dairy, according to an article in The Oregonian, which also contained photos taken by an Oregon Department of Agriculture (ODA) inspector showing the horrendous living conditions of the cows at the dairy. The article quotes a spokeswoman for Tillamook as saying "it is better for the cows and environment to keep a relationship with the dairy."

Also in late March the State of Oregon announced it had reached a settlement with Lost Valley to allow it continue operating. An article announcing the settlement said that "under the new agreement, Lost Valley can generate up to 65,000 gallons of wastewater per day compared with the 514,000 the dairy estimated it would need. It also must comply with other terms of its permit, such as notifying the state if there is a wastewater or manure spill. And the dairy must remove 24.4 million gallons of liquid manure from its overloaded storage facilities by summer, so that it can avoid polluting local water sources during a heavy rainstorm."

Reactions to the settlement were swift.

"The state’s settlement barely requires more than compliance with the permit already in place—it’s a status quo deal that lets Lost Valley off the hook. The Governor and ODA should have continued seeking to close the operation, which they should never have approved in the first place,' said Tarah Heinzen, staff attorney with Food & Water Watch, in a press release issued by a coalition of farm, environmental and animal welfare organizations.

"If ODA refuses to use its authority to stop factory farms with repeated and serious violations, Oregon clearly needs stronger water and air pollution laws to bar such irresponsible proposals in the first place,” said Scott Beckstead, rural affairs director for the Humane Society of the United States. “For example, Oregon does not require air pollution permits or monitoring at factory farms, and legislation to establish air quality protections from the industry failed last year."

Amy Van Saun of the Center for Food Safety said in the press release that the organization was extremely disappointed in the state for not using its authority to prevent this factory dairy from coming in. "And now that disappointment continues with a weak settlement despite numerous, disturbing permit violations that endanger public health and the environment. We warned ODA and the Governor that this would happen, especially with an operation of this enormous size, and business-as-usual is not an acceptable response."

In the settlement, weekly inspections by the state to insure compliance were agreed to for a period of one year. If Lost Valley complies for that period, it will be allowed to return to operating under its original permit. Specifics have not been made available as to how te Velde and Lost Valley would rectify the violations outlined in the lawsuit and meet the new conditions for waste limits and removal while maintaining the same number of cows at the facility.


UPDATE: Lost Valley's owner, California businessman Greg te Velde, has been drawing water from a protected aquifer in the Boardman area, with the tacit permission of Oregon Governor Kate Brown, her staff and the directors of at least three state agencies, according to a damning article in The Salem Statesman-Journal posted on March 23rd.

It says te Velde "moved ahead without the necessary permits, using a loophole in Oregon law to pull water out of an underground aquifer that’s been off limits to new wells for 42 years, alarming neighboring farmers who say their water supplies are now at risk." The paper said it has documents showing that Brown and state officials "knew the dairy would fall back on the loophole if a proposed water trade was challenged."

The article said that te Velde drilled three wells into the aquifer that is used for drinking water by area residents. The aquifer, which local residents use for drinking water, was designated a Groundwater Management Area (GWMA), so named because nitrate concentrations in many area groundwater samples exceed the federal safe drinking water standard.

When state officials found out about the illegal wells, te Velde agreed to truck in water, but the newspaper reports that "records show he brought in little water. Instead, Water Resources officials discovered months later that te Velde actually drew most of the water from one of the wells, claiming an exemption for watering stock — just as the earlier memos among the governor's staff and state agencies had predicted.

"And when ordered to install a monitoring device on the well, te Velde put in one with an unauthorized reset button, according to Water Resources officials. Now, the state's water officials say they have no idea how much water the dairy is taking out of the aquifer."


UPDATE: A recent report in the East Oregonian newspaper indicated that Rabobank, a Dutch agricultural lender, claimed that Greg te Velde, owner of Lost Valley Farm, had defaulted on part of $60 million in loans for the Boardman dairy and two other dairies te Velde owns in California. "John Top, owner of Toppenish Livestock, said they will begin preparing next week for the auction, which is scheduled for April 27," the article stated. "However, according to a preliminary injunction filed in Morrow County, te Velde has not given the auctioneer permission to enter the dairy."

Today (Thursday, 4/5/17) I was able to reach Cody Buckendorf, Operations Manager at Toppenish Livestock, who said that an on-site auction was going ahead on Friday, April 27th, and that the auction company had been given access to the property. He said that their first day on the property to process cows prior to auction was yesterday, (Wednesday, April 5), and that the bank was estimating there would be 19,000 cows auctioned. When questioned about the conditions he observed at the dairy, he said that, contrary to the photos taken by the inspector that led to its shutdown (photos, above), "it was one of the cleanest dairies I've seen." Clif Bar Invests In Local Grains

I first heard about The Bread Lab from reading a New York Times article three years ago describing it as a "project to reinvent the most important food in history." It depicted Dr. Stephen Jones, the lab's founder, as looking like "a lovably geeky high school teacher," albeit one bent on nothing less than a revolution in how we think about bread.

"What most people picture when they think of flour—that anonymous chalk-white powder from the supermarket—is anathema to Jones. Before the advent of industrial agriculture, Americans enjoyed a wide range of regional flours milled from equally diverse wheats, which in turn could be used to make breads that were astonish­ingly flavorful and nutritious. For nearly a century, however, America has grown wheat tailored to an industrial system designed to produce nutrient-poor flour and insipid, spongy breads soaked in preservatives. For the sake of profit and expediency, we forfeited pleasure and health. The Bread Lab’s mission is to make regional grain farming viable once more, by creating entirely new kinds of wheat that unite the taste and wholesomeness of their ancestors with the robustness of their modern counterparts."

In the intervening years since that article was written, Jones's project, part of Washington State University's College of Agricultural, Human and Natural Resource Sciences, has achieved national and international recognition for breeding, testing and rejuvenating forgotten varieties of wheat, barley, buckwheat and rye. It's also helped improve the prospects of farmers in Washington's Skagit Valley, where Jones built his lab in order to be closer to the fields and the farmers who test the grains.

"We’ve seen the addition of seven new businesses and about 200 new jobs because of the Bread Lab," said Patsy Martin, director of the Port of Skagit. "Farmers are making a profit off their crops and value is being added to the crops by new businesses. It’s our goal to have the number of businesses continue to grow and add more good jobs. A resilient agricultural economy will keep the Skagit Valley unique, special and viable into the future."

Today Clif Bar and Company, in association with King Arthur Flour, announced the funding of a $1.5 million endowment to enable the Bread Lab to continue its research breeding grains adapted to organic farming practices in perpetuity.

Matthew Dillon, Clif Bar's senior director of agricultural policy and programs (profiled recently here), said, "Public sector land grant universities like Washington State have seen their funding for organic agricultural research cut year after year at the state and federal levels. With the endowment, [Clif Bar and Company] is putting a stake in the ground for organic’s future because we believe the Bread Lab can improve the good that organic brings to farmers, consumers and the planet."
